Ahh the zucchini. Such a versatile veggie. You can sauté it, fry it, or just enjoy it raw.
So what’s our favorite way to use a zucchini? EW! NO! As PIZZA! We use it for pizza crust! And after you try this recipe, you will use it for the same thing. Whatever else you may use it for is totally your top secret personal beezwax.
Here’s whatcha need:
For the crust –
2 small eggs
3 small-medium zucchinis about 8″ each (Yeah. We see it. Make your own joke. It’s just too easy.)
1.5 cups grated parmesan, provolone, or mozzarella. We like to use a combo of all three. Cause who doesn’t like a cheese threesome? (There it is.)
1 Tbsp of salt
For the toppings –
Use anything you would want on any pizza. Sky is the limit.
We like to use a mild tomato sauce OR pesto, grated firm mozzarella cheese OR sliced fresh mozzarella cheese,
ricotta cheese or goat cheese, and an assortment of veggies that have been pre-sautéed in olive oil for extra flavor.
Adding a little fresh Italian parsley or basil is also nice after the pizza has been cooked.
Of course you can also add meat if you like/eat meat on pizza. Crumbled sausage works well, just Pre-sauté.
PS. Is it us, or would crumbling sausage make a really good euphemism? Like a dick punch, but from Edward Scissorhands.
Here’s how ya do:
Shred the zucchini and sprinkle it with salt.
Let mixture stand for a couple of hours.
Pre-heat oven to 400 degrees.
Strain mixture and ring out all the water by wrapping it in cheesecloth and squeezing.
After the water is out, mix in the eggs and 1.5 cups of grated cheese.
Spread mixture onto an oiled baking pan.
Bake at 400 degrees for about 20 minutes or until surface is dry.
Take out of oven and brush top with olive oil and broil for 5 minutes for crispness.
Add sauce and toppings.
Top with cheese and bake at 350 for about 25 minutes or until cheese has melted.
Enjoy and try not to crumble anyone’s sausage if they complain about not wanting to eat this totally yum recipe.
